i would go rounder and put more simetry in the letters in the symbol. The actual aspect of the "8" is not even , but this is not so bad actually, the bad part is that it lacks in harmony. The diagonal cut you put on the "c" does not fit with the straight, vertical cut in the "a", it just makes it dinamic but not in a good way...so work more on this. Also , perceptually the "ca" is not centered with the beautiful burgundy red bubble of your choice. Typography does not fit well with the symbol, choose one, play modern and pick a sans serif , elegant and modern type, and keep the symbol or keep that font and make the symbol more classy. The shade of infinty you chose to keep is more suggested and intriguing than declarative, put more value on this.

I like the idea but I don't think it's very well executed. I just see an S when I look at the symbol, not the infinity sign. I don't think you need the outer circle either, I would just make the symbol colored so the overall weight of the logo is lighter and more balanced.
