Brief from client
Need to be able to turn file into DST file for clear fresh stitching.
I experience too many layers when trying to digitize the logo, also tried to use only 4 colors and was not successful.

Try not to use actually photo in a logo. It looks tacky (like a bad diner menu) and there will be a lot of issues when it comes to using the logo in various situations. Also the fonts are bad and misaligned. It looks too random. The meal-mates is just a terrible type set, and although the "culinary services" isn't terrible it is an overused font. You can probably find better somewhere. And whats with the background gradient?
This is not a logo. More like a banner.
Like MDCasino say, never use photographs in a logo. It will cause a lot of problems, in terms of resolution, rights, etc...
The Image Trace option doesn't miraculously transform a picture into a ready to use vector shape. It would be too simple =)
Get a lot of inspiration from sites like www.logopond.com or www.dribbble.com and restart from scratch with a pen and a piece of paper this time.
